Alright guys. It’s been almost a full week since I made the decision to go Paleo. Not sure what Paleo is? It’s basically eating anything that once had a face, or came from the ground. That’s it. If you need a little more explanation, here is a good one.
One of my biggest sacrifices actually ended up being coffee. Coffee itself is actually okay on Paleo diets, but for me, it was having to give up the creamer. Coffee and I don’t do so well without all that creamer, sugar, milk, you know the good stuff. So I pretty much just quit it cold turkey. The first day I had a painful headache, which I assume was from the lack of caffeine that day. By the next day, I was fine. Now, when I tried to drink some coffee on Saturday with some almond and coconut milk and honey, not only did it taste horrible (not sweet at all) but my body told me NO WAY. So I guess I’m kicking coffee for good now. Sad day…
One of the things you all have to understand, is I was in no way a “healthy” eater, as much as I would like to kid myself. I mean, we weren’t eating fast food everyday, but we were eating a lot of processed foods. Eliminating all of it cold turkey is not easy. It takes some damn will power and determination.
But, I did it.
I did it so damn good, that as of today, I am down 8 lbs!! Holy cow!
Now, if you’re like me, you cannot just live your life without sweets ever again? Amiright? You honestly don’t need to. I spent all week pinning Paleo Recipes on Pinterest. Many are even Paleo friendly “sweets”. I was good all week, well except for 10 of those dark chocolate covered acai berries (from Costco), that I made some Paleo brownies on Friday. They were different, don’t get me wrong, but they were delicious and completely satisfying for me.
That is another reason I am loving this new food lifestyle for me. I CAN still bake and I CAN still have pancakes on the weekend with my family. It’s all about changing how you go about it though.
Here is what I ate for the past week:
Breakfast: Eggs with mini pepperonis, sausage crumbles, onion, and diced tomato.
Lunch – Egg and avocado salad with lettuce and tomatoes, and carrots.
Snack: Apple with Sunflower butter
Dinner: Turkey burger with grilled onion and mushrooms, spinach leaves, and tomato slices, and a baked sweet potato (with butter)
Breakfast: Egg and avocado Salad, strawberries
Snack: 2 Clementines
Lunch: Turkey burger with diced tomato, and a baked sweet potato (with butter)
Snack: Baby carrots and a few pepperonis
Dinner: Pork chops with honey-mustard & pecans, and caramelized beets
Breakfast: Avocado and Egg Salad & homemade crock-pot applesauce
Snack: Banana and almonds
Lunch: Turkey burger, baked sweet potato, and strawberries
Dinner: Kale & Sausage Soup (added mushrooms) and grapes
Dessert: 10 dark chocolate covered acai berries
Breakfast: Avocado and Egg Salad & applesauce
Lunch: Leftover pork chop and beets
Snack: Almonds and blackberries
Dinner: Country style pork ribs & bacon wrapped asparagus
Breakfast: Eggs scrambled with rib meat, onions, and peppers
Lunch: leftover kale & sausage soup and mandarin
Snack: almonds and blackberries
Dinner: Turkey burgers with lettuce, grilled onion, tomato slices, and avocado, and Balsamic Honey Glazed Oven Roasted Baby Carrots
Dessert: Coconut Flour brownies
Breakfast: Paleo Pancakes (mixed with my crock pot applesauce) with sunflower seed butter spread on & maple syrup, eggs, and bacon
Snack: Nuts & Fruit mix from Costco
Lunch: leftover rib & bacon wrapped asparagus
Snack: applesauce & brownie
Dinner: Turkey taco salad
Breakfast: Eggs & beef chorizo, bite of leftover pancake
Lunch: leftover kale and sausage soup & mandarins
After looking over my weeks meals, you can see I’m not 100% Paleo. I had butter, but no other dairy. The nuts and fruit mix from Costco has some added sugar to the dried fruit, and I even looked at the back of the garlic salt and garlic powder I have always used and saw sugar and vegetable oil in that. Crazy right?
As much as I would love to be able to buy nothing but “organic” and “grass-fed” meat, that is not within our budget. I try and get it when I can though.
Since I can’t convert my entire family right now, I just add stuff for them like couscous, rice, sandwiches, and tortillas for their meals. It’s not as hard as I thought it was going to be. Since we are not eating out, like at all. It’s honestly not that much more costly either.
I did pick up a couple of Paleo Recipe Books* from Amazon, that I can’t wait to try out.
I’m very happy with week one, and looking forward to working out more this coming week.

…to see that scale go below 200 before the year ends!!!!
Goals for this coming week are to drink more water, because I need to. Maybe add in some lemon to it more often. And to continue fighting temptation all around me =)
