Nothing says Back To School, like breaking out the Crock Pot. The days are filled with drop off’s, pick up’s, sports, activities, and just tons to do. When the days are hectic, the last thing I want to think about is what to make for dinner. That’s why I love slow cooker meals. They are easy to prep, it does all the cooking for you, and it’s overall just simple.
Right now, Tillamook wants to promote healthy school eating habits, with a campaign focused on healthy snacks, lunch and dinner tips & recipes. They gave me a challenge to create something delicious and healthy using their products.
Well, what is more delicious, healthy, and easy then Crock Pot Broccoli and Cheese Soup?
- 1 qt (4 cups) Chicken Broth
- 2 cups skim milk
- 2 - 10 oz bag of frozen broccoli cuts
- 1/2 tablespoon salt
- 1/2 tablespoon pepper
- 4 cups (16 oz) Tillamook Shredded Mac and Cheese Blend
- Combine chicken broth, milk, broccoli, salt & pepper, and 2 cups of cheese into a crock pot, and stir together.
- Cook on low 6-8 hours, or on high 4-5 hours.
- Add in the other 2 cups of cheese at the end, stirring well.
I served the Broccoli and Cheese soup with some grilled cheese, onion, and ham sandwiches, and it was the perfect meal for after a long day.
