Bulk & Freezer Cooking Ideas {Breakfast Foods}

Having prepared meals on hand for the arrival of a new baby (or other life changes) and be a great tool to reduce stress and help keep your budget in line.

Breakfast foods are easy to prepare and can be a huge help in a time crunched morning. Here are some tips for bulk and freezer breakfast prep.

Scrambled Eggs

Scramble everything together and spray your muffin tins. We get what we get when we do these. The number of portions we get varies due to the number of eggs and what I have on hand to put in the mix. Usually, it’s milk, eggs, cheese, bacon/ham and onion in our house, but sausage, green peppers and mushrooms work well too.

Pour mix into muffin tins to about ¾ full. Bake at 350 for about 20 minutes, remove from oven and let cool about 5 minutes, then flip them out of the pan to finish cooling. Once cool, package in zipper bags. When ready to use in the morning, pull on out and microwave for 1 ½ minutes. These are about the perfect size to put on an English muffin. 

Pancakes & French Toast

Pancakes and French Toast are both great items to prep in bulk for the freezer. When you fully cook them prior to freezing, there is enough moisture removed that they can be packaged in multiples, yet easily “popped” apart later for single servings.  Apple Oat Pancakes and Apple Cinnamon Oat Pancakes from Scratch are our favorites (and they sneak a fruit serving into the kids’ diets). 

After the pancakes cool, they go into zipper bags in the freezer. French toast is easily put right back into the bread bag to put in the freezer. When warming later, pancakes go in the microwave and French toast into the toaster.

Fruit

Taking a few minutes as soon as you get home from the store to clean, hull and prep fruit can save you time in the following week or so. The trick here is to make sure you have quality containers to put the fruit in. Ziploc containers usually have nice tight seals on them. The less air that can flow through, the longer the fruit will stay edible.
